2 medium apples, cored and sliced (choose Honeycrisp or Granny Smith for the best flavor)

1/2 cup pure maple syrup

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1/4 cup low-sodium chicken broth

Optional: Chopped fresh parsley for garnish

Prepare the Marinade: In a mixing bowl, whisk together the maple syrup, Dijon mustard, minced garlic, fresh thyme, salt, and black pepper until the mixture is well blended and smooth.

      Sear the Pork: Preheat your oven to 400°F (200°C). In a large oven-safe skillet, heat the olive oil over medium-high heat.
