Ingredients

1 cup couscous

1 1/4 cups chicken broth (or water)

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil, divided

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

Zest of 1 lemon

2 tablespoons fresh lemon juice

1/2 cup freshly grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup baby spinach

1/4 cup fresh parsley, finely chopped (for garnish)

Instructions

Prepare the Couscous: In a medium saucepan, bring the chicken broth (or water) to a rolling boil. Once boiling, stir in the couscous, remove it from heat, and cover the saucepan. Allow it to sit for about 5 minutes, or until the liquid is fully absorbed.

Season the Chicken: While the couscous is cooking, season the chicken breasts evenly on both sides with garlic powder, onion powder, salt, and freshly ground black pepper.

Cook the Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken breasts to the skillet and cook for about 6-8 minutes per side, or until they are thoroughly cooked and reach an internal temperature of 165°F (75°C). Once cooked, remove the chicken from the skillet and allow it to rest for a few minutes before slicing it into thin strips.

Combine Couscous with Flavorings: After the couscous has rested, fluff it gently with a fork. Stir in the zest of the lemon, fresh lemon juice, and the remaining tablespoon of olive oil. Gradually mix in the grated Parmesan cheese until everything is well combined. Taste and adjust the seasoning with additional salt and pepper as needed.

Sauté Spinach and Tomatoes: Using the same skillet you cooked the chicken in, add the halved cherry tomatoes and baby spinach. Sauté for approximately 2-3 minutes, stirring occasionally, until the spinach has wilted and the tomatoes are slightly softened.

Assemble the Bowls: To serve, divide the lemon Parmesan couscous evenly among serving bowls. Top each bowl with slices of the cooked chicken, sautéed spinach, and cherry tomatoes. Garnish with freshly chopped parsley for a burst of color and flavor.

Enjoy: If desired, drizzle a touch more lemon juice over the bowls just before serving for extra zing. Serve warm and savor this delightful meal!
