Lemon Butter Tofu with Herbed Couscous

For the Lemon Butter Tofu:

1 block (14 oz) firm tofu, pressed and drained

3 tablespoons unsalted butter

2 tablespoons olive oil (plus extra for cooking)

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon soy sauce

1 teaspoon maple syrup (or honey)

Salt and freshly ground black pepper, to taste

Fresh parsley or basil, for garnish

For the Herbed Couscous:

1 cup couscous

1 1/4 cups vegetable broth (or water)

2 tablespoons olive oil

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, chopped

1 tablespoon fresh cilantro, chopped

Salt and pepper, to taste

Instructions
 

Prepare the Tofu:

    - Begin by cutting the pressed tofu into bite-sized cubes. Use a paper towel to pat the cubes dry, ensuring any excess moisture is removed for better browning.

      Make the Lemon Butter Sauce:

        - In a small saucepan, melt the butter along with 2 tablespoons of olive oil over medium heat.

          - Once the butter is melted, add the minced garlic and sauté for about 1-2 minutes. Stir frequently until the garlic is fragrant but be careful not to let it burn.

            - Mix in the fresh lemon juice, lemon zest, soy sauce, and maple syrup. Allow the sauce to simmer gently while you cook the tofu, stirring occasionally.

              Cook the Tofu:

                - In a non-stick skillet, heat a little olive oil over medium-high heat. Add the tofu cubes to the skillet in a single layer.

                  - Cook the tofu for about 6-8 minutes, flipping occasionally, until all sides are golden brown and crispy.

                    - Once the tofu is cooked, pour the lemon butter sauce over it and toss to coat the cubes thoroughly. Cook for an additional 2-3 minutes until heated through. Adjust the seasoning with salt and pepper to your liking.

                      Prepare the Herbed Couscous:

                        - In a medium saucepan, bring the vegetable broth (or water) to a boil over high heat.

                          - Once boiling, remove the saucepan from heat and add in the couscous, stirring briefly. Cover the pot with a lid and let it sit for about 5 minutes until the couscous has absorbed all the liquid.

                            - After the time is up, fluff the couscous gently with a fork. Stir in the olive oil, lemon zest, fresh lemon juice, parsley, and cilantro. Season with salt and pepper to taste.

                              Assemble the Dish:

                                - On a serving platter or individual plates, create a base of herbed couscous.

                                  - Top generously with the lemon butter tofu.
