Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken thighs, diced into bite-sized pieces

3 tablespoons soy sauce

1 tablespoon gochujang (Korean red chili paste)

1 tablespoon sesame oil

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon freshly grated ginger

For the Lettuce Cups:

1 head of butter or iceberg lettuce, separated into individual leaves and washed thoroughly

1 cup shredded carrots

1 small cucumber, peeled and julienned

2 green onions, finely chopped

1 tablespoon toasted sesame seeds (for topping)

For Garnish (optional):

Fresh cilantro leaves

Lime wedges

Instructions

Marinate the Chicken:

    - In a mixing bowl, combine the soy sauce, gochujang, sesame oil, honey, minced garlic, and grated ginger. Whisk together until well incorporated.

      - Add the diced chicken thighs to the marinade and toss until every piece is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to meld. For an even richer taste, marinate for up to 2 hours.

        Cook the Chicken:

          - Heat a large skillet over medium-high heat. Lightly drizzle a splash of vegetable oil into the pan.

            - Once the skillet is hot, add the marinated chicken (make sure to discard any excess marinade). Cook the chicken for approximately 6-8 minutes, stirring frequently, until browned and fully cooked with a slight caramelization.

              Prepare the Lettuce Cups:

                - While the chicken is cooking, prepare the lettuce cups. Carefully separate and wash the leaves of butter or iceberg lettuce, then pat them dry using a paper towel to remove excess moisture.

                  Assemble the Cups:

                    - Arrange the lettuce leaves on a large serving platter, positioning them so that the cup side is facing upwards.

                      - Generously spoon the cooked chicken onto each lettuce leaf, followed by a sprinkling of shredded carrots, julienned cucumber, and chopped green onions.

                        Garnish and Serve:

                          - Finish the assembly by sprinkling the toasted sesame seeds over each filled lettuce cup. Optionally, add a few sprigs of fresh cilantro on top for a burst of freshness. Serve lime wedges on the side for guests to squeeze over their cups just before eating.

                            Enjoy:

                              - Serve the Korean BBQ Chicken Lettuce Cups immediately for the best taste and texture, and savor the vibrant, aromatic flavors in every bite.
