Ingredients

1 lb baby carrots (or large carrots, peeled and cut into fry shapes)

2 tablespoons honey

2 tablespoons Dijon mustard

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish, optional)

Instructions

Preheat the Oven: Set your oven to 425°F (220°C) to prepare for roasting.

Prepare the Carrots: If you are using large carrots, peel them and slice them into thin fry-like shapes. For baby carrots, you may choose to leave them whole or slice them in half lengthwise to create thinner fries.

Make the Honey Mustard Sauce: In a mixing bowl, combine the honey, Dijon mustard, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Whisk these ingredients together until you achieve a smooth and well-blended sauce.

Coat the Carrots: Transfer the carrot fries into a spacious bowl. Drizzle the honey mustard mixture over the carrots. Toss gently but thoroughly, ensuring that every piece is evenly coated with the sauce.

Arrange on a Baking Sheet: Line a baking sheet with parchment paper for quick and easy cleanup. Spread the coated carrot fries in a single layer on the baking sheet, leaving enough space between each fry to promote even roasting.

Roast the Carrots: Place the baking sheet in the preheated oven. Roast the carrot fries for 20-25 minutes, making sure to flip them halfway through cooking to ensure an even browning. They should come out tender and slightly caramelized.

Serve: Once out of the oven, allow the carrot fries to cool for a couple of minutes. If desired, garnish with freshly chopped parsley for a pop of color and flavor. Serve these warm as a delightful side dish or snacking option.
