4 salmon fillets (approximately 6 oz each)

1 lb fresh asparagus, trimmed

1/4 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil (plus extra for drizzling)

2 cloves garlic, minced

Juice of 1 lemon (about 2 tablespoons)

Zest of 1 lemon

Salt and black pepper, to taste

Fresh thyme or parsley, for garnish (optional)

Prepare the Marinade: In a mixing bowl, combine the honey, Dijon mustard, 2 tablespoons of olive oil, minced garlic, lemon juice, lemon zest, salt, and black pepper. Whisk everything together until the marinade is smooth and fully blended. Taste and adjust the seasoning as needed.

    Marinate the Salmon: Place the salmon fillets skinside down in a shallow dish. Pour half of the honey mustard marinade over the fillets, making sure to coat each piece evenly. Allow the salmon to marinate for about 20-30 minutes at room temperature, or for up to 2 hours if you prefer to refrigerate it.

      Prepare the Asparagus: While the salmon is marinating, preheat your oven to 400°F (200°C). On a large baking sheet, arrange the trimmed asparagus spears in a single layer. Drizzle with a touch of olive oil, then sprinkle with salt and black pepper. Toss the asparagus until well coated.

        Bake Asparagus: Place the baking sheet in the preheated oven and roast the asparagus for about 10-12 minutes, or until it is tender but retains a slight crispness.

          Cook the Salmon: After the asparagus has roasted for a bit, take the marinated salmon fillets and place them on the same baking sheet, if there is enough room.
