1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup jasmine rice (or your favorite rice variety)

2 cups water or chicken broth (for cooking the rice)

1 tablespoon vegetable oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 cup low-sodium soy sauce

1/4 cup honey

2 tablespoons rice vinegar

2 teaspoons sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken the sauce)

1 cup broccoli florets (steamed)

1 cup carrots, julienned (steamed)

1/4 cup green onions, sliced (for garnish)

1 tablespoon sesame seeds (optional, for garnish)

Instructions
 

Cook the Rice: In a medium saucepan, combine 1 cup of jasmine rice with 2 cups of water or chicken broth. Bring to a vigorous boil over high heat. Once boiling, reduce the heat to low, cover with a lid, and allow it to simmer for 18-20 minutes, or until the rice is tender and the liquid is completely absorbed. Once cooked, remove from heat and fluff the rice with a fork. Set aside, keeping it covered to stay warm.

    Prepare the Sauce: In a medium mixing bowl, whisk together the low-sodium soy sauce, honey, rice vinegar, sesame oil, minced garlic, and freshly grated ginger until well combined. Set this flavorful sauce aside for later.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the bite-sized pieces of chicken thighs. Cook for about 5-6 minutes, stirring occasionally, until the chicken is nicely browned and fully cooked through.

        Add Sauce: Once the chicken is cooked, pour the prepared sauce over the chicken in the skillet. Bring to a gentle simmer. Stir in the cornstarch-water mixture carefully to thicken the sauce.
