1 cup small mushrooms, cleaned and halved

2 tablespoons extra virgin olive oil

4 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly ground black pepper to taste

1/2 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/4 cup freshly grated Parmesan cheese

1 tablespoon fresh parsley, finely chopped (for garnish)

1 package of store-bought puff pastry (thawed)

Optional: crushed red pepper flakes for a hint of spice

Preheat the Oven: Start by preheating your oven to 400°F (200°C). While the oven warms up, line a baking sheet with parchment paper to prevent sticking.

    Prepare the Mushrooms: In a large mixing bowl, combine the halved mushrooms, extra virgin olive oil, finely minced garlic, dried oregano, dried thyme, salt, and pepper. Stir well until all the mushrooms are evenly coated with the mixture.

      Roast the Mushrooms: Spread the seasoned mushrooms out on the prepared baking sheet in a single layer. Roast them in the preheated oven for approximately 15-20 minutes, or until the mushrooms are golden brown and tender. Be sure to stir halfway through the roasting time for even cooking. Once roasted, remove them from the oven and allow to cool slightly.
