2 medium zucchinis (approximately 1 ½ cups grated)

1 cup whole wheat flour

½ cup rolled oats

½ teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

¼ teaspoon salt

3 tablespoons honey or maple syrup

1 large egg

1 teaspoon vanilla extract

1/3 cup unsweetened applesauce

½ cup chopped nuts (walnuts or pecans) or chocolate chips (optional)

¼ cup shredded coconut (optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it with non-stick cooking spray.

    Prepare the Zucchini: Grate the zucchinis using a box grater or a food processor. After grating, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. Set the drained zucchini aside.

      Mix Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, rolled oats, baking soda, baking powder, ground cinnamon, and salt. Use a whisk to mix thoroughly, ensuring there are no lumps in the dry ingredients.

        Blend Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), egg, vanilla extract, and unsweetened applesauce until the mixture is smooth and well combined.

          Combine the Mixtures: Gradually pour the wet ingredients into the dry mixture. Gently fold in the grated zucchini until just incorporated. If you choose to include them, add in the chopped nuts or chocolate chips and shredded coconut at this stage, mixing until just combined without overmixing the batter.

            Fill the Muffin Cups: Using a spoon or a cookie scoop, evenly distribute the muffin batter into the prepared muffin tins, filling each cup about two-thirds full to allow for proper rising during baking.
