Ingredients

2 cups canned black beans, rinsed and drained

1 cup canned pinto beans, rinsed and drained

1 cup Hatch green chilies, diced (either fresh or canned)

1 cup cream cheese, softened to room temperature

1 cup shredded Monterey Jack cheese

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust according to your spice preference)

Salt and freshly ground black pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips, for serving

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C) so it’s ready when your dip is prepared.

Prepare the Beans: In a large mixing bowl, combine the rinsed and drained black beans and pinto beans. Using a fork or potato masher, lightly mash the beans, ensuring some chunky bits remain for texture and heartiness.

Incorporate the Other Ingredients: To the bean mixture, add in the diced Hatch green chilies, softened cream cheese, shredded Monterey Jack cheese, and sour cream. Use a spatula or wooden spoon to thoroughly mix everything together until it forms a creamy, cohesive mixture.

Add Seasoning: Sprinkle in the garlic powder, ground cumin, smoked paprika, and cayenne pepper. Season with salt and black pepper to taste. Stir until all ingredients are evenly distributed and the mixture is well blended.

Bake the Mixture: Transfer the dip mixture into an appropriately sized oven-safe baking dish, spreading it out evenly for even cooking.

Oven Time: Place the baking dish in your preheated oven and bake for about 25-30 minutes, or until the dip is bubbly, hot, and the top has a beautiful golden hue.

Garnish and Enjoy: After baking, carefully remove the dish from the oven and allow it to cool for a few minutes. Garnish with freshly chopped cilantro before serving. Enjoy the dip warm with generous amounts of tortilla chips for an irresistible snack or appetizer.
