Prep the Strawberries: In a medium mixing bowl, combine the halved strawberries with granulated sugar, lemon juice, and vanilla extract. Gently toss the strawberries until they are evenly coated. Allow them to sit for about 15 minutes, letting the flavors meld while the strawberries macerate.
