4 boneless, skinless chicken breasts

1 cup pineapple juice

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon olive oil

2 cloves garlic, minced

2 cups jasmine rice

1 can (about 14 oz) coconut milk

1 cup water

1 cup fresh pineapple, diced (or canned if preferred)

1 red bell pepper, diced

1/2 cup green onions, chopped

1/4 cup cilantro, chopped (optional)

1 tablespoon lime juice
