1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, paper-thin sliced

1/2 bell pepper (choose red or yellow), diced

1/2 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup balsamic vinegar or red wine vinegar

1 teaspoon honey (optional, for sweetness)

Fresh parsley or dill, finely chopped for garnish

Instructions
 

Marinate the Chicken: In a mixing bowl, whisk together the extra virgin olive oil, dried oregano, salt, and freshly ground black pepper.
