Ingredients

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 red bell pepper, chopped into 1-inch pieces

1 green bell pepper, chopped into 1-inch pieces

1 large red onion, cut into wedges

3 tablespoons olive oil

2 tablespoons freshly squeezed lime juice

3 cloves garlic, minced

2 teaspoons ground cumin

2 teaspoons chili powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon salt, or to taste

½ teaspoon freshly cracked black pepper

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before using)

Instructions

Marinate the Chicken: In a spacious mixing bowl, combine the olive oil, lime juice, minced garlic, ground cumin, chili powder, smoked paprika, dried oregano, salt, and black pepper. Whisk the ingredients together until the mixture is smooth and well blended. Add the cubed chicken to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate to marinate for at least 30 minutes; for deeper flavor, let it marinate for up to 2 hours.

Prepare the Vegetables: During the chicken marination, wash and chop your vegetables. Slice the red and green bell peppers into 1-inch pieces and the red onion into wedges. Try to keep all the pieces uniform in size for even cooking during grilling.

Assemble the Skewers: Preheat your grill to medium-high heat. Retrieve the marinated chicken from the refrigerator. Begin threading the ingredients onto the skewers by alternating pieces of marinated chicken with the bell pepper and onion wedges. Continue until all the chicken and vegetables are securely packed onto the skewers, maximizing space for even cooking.

Grill the Skewers: Once the grill is preheated, lightly oil the grates to prevent sticking. Carefully place the skewers on the grill. Grill for about 10 to 12 minutes, turning them occasionally to achieve an even cook. The chicken should be cooked through (reaching an internal temperature of 165°F) and display beautiful grill marks, while the vegetables should be tender but retain a bit of crispness.

Serve and Enjoy: After grilling, carefully remove the skewers from the grill and allow them to rest for a couple of minutes to retain their juices. Serve the sizzling fajita skewers with warm tortillas, a side of creamy guacamole, zesty salsa, and your favorite toppings to complete the meal.
