For the Chicken Marinade:

1 lb boneless, skinless chicken breasts

3 tablespoons olive oil

Juice of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup plain Greek yogurt

1 small cucumber, shredded and drained of excess moisture

1 clove garlic, minced

Juice of 1/2 lemon

1 tablespoon fresh dill, finely chopped

Salt to taste

For Assembly:

4 whole wheat pita breads

1 cup cherry tomatoes, halved

1 cup romaine lettuce, shredded

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

Kalamata olives for garnish

Instructions
 

Marinate the Chicken:

    - In a medium-sized bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and pepper. Place the chicken breasts in the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 30 minutes, or up to 2 hours for enhanced flavor.

      Prepare the Tzatziki Sauce:

        - In another bowl, mix together the Greek yogurt, shredded cucumber (make sure to press out any excess water for a thicker sauce), minced garlic, lemon juice, chopped dill, and a pinch of salt. Stir until well combined, then cover and refrigerate until you’re ready to serve.

          Cook the Chicken:

            - Heat your grill or skillet over medium-high heat. Remove the chicken from the marinade and place it on the hot grill or skillet. Cook for approximately 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Once done, remove the chicken from the heat and let it rest for a few minutes before slicing it into strips.

              Assemble the Pita Pockets:

                - Lightly warm the pita breads in a dry skillet or microwave for about 1 minute on each side. Carefully slice each pita halfway to create a pocket. Begin stuffing each pocket with a few strips of grilled chicken. Follow with a handful of cherry tomatoes, shredded romaine lettuce, a few slices of red onion, and a generous sprinkle of crumbled feta cheese.

                  Finish with Tzatziki:

                    - Generously drizzle the refreshing tzatziki sauce inside each pita pocket. If desired, top with a few Kalamata olives for added flavor and garnish.

                      Serve:
