6 large eggs

1/4 cup finely chopped green onions

1/4 teaspoon garlic powder

1/2 teaspoon smoked paprika

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it’s hot enough for a perfect bake.

    Prepare the Muffin Tin: Take a 12-cup muffin tin and lightly spray each cup with olive oil spray or cooking spray. This will help prevent the tater tot cups from sticking.

      Form the Tater Tot Cups: Take approximately 6-7 frozen tater tots and place them in each muffin cup. With the back of a fork or your fingers, press the tater tots down firmly, creating a cup shape with a well in the center for your filling.

        Pre-bake Tater Cups: Place the muffin tin in the preheated oven and bake for about 15 minutes. You’re looking for the tater tot cups to become golden brown and crispy on the edges.

          Mix the Filling: While the tater cups are baking, crack the eggs into a medium-sized mixing bowl. Add the shredded cheese, crumbled sausage (or bacon), diced bell peppers, green onions, garlic powder, smoked paprika, along with salt and black pepper.
