Garlic Parmesan Mashed Potatoes

2 pounds russet potatoes, peeled and cut into approximately 1-inch cubes

4 cloves garlic, finely minced

½ cup unsalted butter, softened at room temperature

1 cup heavy cream, warmed

1 cup freshly grated Parmesan cheese

Salt and freshly ground black pepper, to taste

Fresh parsley, finely chopped (for garnish)

Prep the Potatoes: Begin by placing the peeled and cubed russet potatoes into a large pot. Pour in enough cold water to completely cover the potatoes, and stir in a generous pinch of salt to enhance their flavor.

    Cook the Potatoes: Bring the pot to a vigorous boil over medium-high heat. Once boiling, reduce the heat to a gentle simmer. Let the potatoes cook until they are fork-tender, which should take about 15-20 minutes.

      Sauté the Garlic: While the potatoes are cooking, take a small saucepan and heat it over medium heat. Add the minced garlic along with 2 tablespoons of softened butter. Sauté the garlic for about 2-3 minutes, or until it becomes fragrant and turns a light golden color. Be careful not to burn it. Remove the saucepan from heat and set aside.

        Drain and Mash: Once the potatoes have finished cooking, carefully drain them in a colander. Return the drained potatoes back to the pot.

          Add Ingredients: Into the warm potatoes, mix in the sautéed garlic and melted butter mixture, the remaining softened butter, warmed heavy cream, and the freshly grated Parmesan cheese.
