Ingredients

2 cups cooked pasta (any shape, ideally shells or bowties)

1 cup mixed fresh fruits (choose from strawberries, blueberries, peaches, or any other seasonal fruits, all chopped)

1 cup ricotta cheese

1 cup Greek yogurt

1/2 cup shredded mozzarella cheese

1/4 cup honey or maple syrup (adjust to taste for sweetness)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 cup granola (for an added crunchy topping)

Fresh mint leaves (for garnishing)

Instructions

Preheat the Oven: Set your oven temperature to 350°F (175°C) to preheat while you prepare the other ingredients.

Prepare the Pasta: Cook the pasta as per the package instructions until al dente. Drain the pasta and rinse it under cold water to halt the cooking, then set it aside to cool.

Create the Ricotta Mixture: In a medium-sized mixing bowl, combine the ricotta cheese, Greek yogurt, honey (or maple syrup), vanilla extract, and ground cinnamon. Use a whisk or spatula to blend the ingredients together until you achieve a smooth and creamy consistency.

Combine Ingredients: In a large mixing bowl, carefully fold the cooked pasta and the chopped mixed fruits into the ricotta mixture. Stir gently until all components are well-coated with the creamy mixture.

Prepare the Baking Dish: Lightly grease a medium-sized baking dish (approximately 9x13 inches in size) with cooking spray or butter. Transfer the pasta and fruit mixture into the dish, spreading it out evenly for even baking.

Add Toppings: Sprinkle the shredded mozzarella cheese evenly over the top of the pasta bake. Follow this with a generous layer of granola to provide a delightful crunch in each bite.

Bake: Place the baking dish in the preheated oven and bake for about 25 to 30 minutes, or until the cheese is bubbly and the top layer achieves a beautiful golden-brown color.

Garnish and Serve: Once you take it out of the oven, allow it to cool for a few minutes. Just before serving, enhance the presentation by garnishing with fresh mint leaves, which will add a vibrant touch and a hint of freshness.
