Ingredients

1 cup rolled oats

1 cup almond flour (or substitute with all-purpose flour)

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup coconut oil, melted

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (or chunks)

1 cup yogurt (Greek or regular, any flavor of your choice)

1/2 cup fruit (such as berries or your favorite chopped fruit) for topping

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare an 8x8 inch baking dish by lining it with parchment paper, ensuring there’s some overhang on the sides for easy lifting later.

Mix Dry Ingredients: In a spacious bowl, combine the rolled oats, almond flour, baking powder, baking soda, and salt. Use a whisk or a fork to stir them together until they are well blended.

Combine Wet Ingredients: In another bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until the mixture is smooth and homogenous.

Combine Mixtures: Gradually pour the wet mixture into the bowl with the dry ingredients. Stir well until everything is fully incorporated. Gently fold in the dark chocolate chips, distributing them evenly through the mixture.

Spread and Bake: Transfer the batter into your prepared baking dish, spreading it evenly to cover the bottom. Place it in the oven and bake for 15-18 minutes. The bars are done when the edges turn lightly golden and a toothpick inserted into the center comes out clean.

Cool and Freeze: Once baked, allow the bars to cool entirely in the baking dish. After cooling, spread an even layer of yogurt over the top of the bars. Feel free to use any flavor of yogurt that you enjoy, whether it be fruity or plain.

Add Toppings: Evenly sprinkle your chosen fruit over the yogurt layer, ensuring that each bar will have a delicious topping.

Freeze: Cover the baking dish tightly with plastic wrap or aluminum foil and place it in the freezer. Let it freeze for at least 3-4 hours or until the yogurt is completely solid.

Slice and Serve: After freezing, use the overhanging parchment paper to lift the bars out of the baking dish. Carefully slice the solidified mixture into squares or rectangles, as preferred.

Enjoy: These delightful bars can be enjoyed directly from the freezer or, if you’d like a softer texture, let them sit out for a few minutes before serving. They are perfect for a quick snack or a light dessert!
