1 cup mixed berries (a delightful combination of strawberries, blueberries, raspberries, and blackberries)

1/4 cup honey or maple syrup (adjust to your taste)

1 teaspoon vanilla extract

1/2 cup coconut milk (optional, for a creamier texture)

Fresh fruit slices (like strawberries or kiwi) for garnish (optional)

Instructions
 

Prepare the Berries: Rinse your mixed berries under cool running water and gently pat them dry with a paper towel. For strawberries, remove the leafy stems and slice them into bite-sized pieces to ensure even blending.

    Blend Ingredients: In a high-speed blender or food processor, combine the Greek yogurt, mixed berries, honey (or maple syrup), vanilla extract, and coconut milk (if using). Blend on high until the mixture is smooth and creamy. For added texture, consider saving a few whole berries to fold in later.

      Taste Test: Before freezing, take a quick taste of your berry yogurt mixture. If you feel it needs a touch more sweetness, drizzle in additional honey or syrup and blend again to combine.

        Fill the Molds: Carefully pour the yogurt mixture into your popsicle molds, ensuring to leave a small space at the top to allow for expansion as they freeze. If you saved some berries, now's the time to either sprinkle them at the bottom of the molds or gently fold them in before pouring.

          Insert Sticks: Gently place popsicle sticks in the center of each mold. If the sticks wobble or don’t stay upright, simply freeze the molds for about 1-2 hours until the mixture is slightly set, and then insert the sticks for stability.
