Ingredients

1 cup Greek yogurt (plain or vanilla)

1 cup fresh figs, chopped (or dried figs, rehydrated)

½ cup coconut milk

¼ cup honey or maple syrup (adjust to your preferred sweetness)

1 teaspoon vanilla extract

½ cup shredded unsweetened coconut

¼ teaspoon sea salt

Optional: Fresh figs and additional shredded coconut for garnish

Instructions

Prep the Figs: If you are using dried figs, soak them in warm water for 15 minutes to rehydrate, then drain and chop. For fresh figs, rinse them well, remove the stems, and chop into small, bite-sized pieces.

Blend Ingredients: In a large mixing bowl, combine the Greek yogurt, coconut milk, honey or maple syrup, vanilla extract, and sea salt. Use a whisk or an electric mixer to blend the mixture until it is completely smooth and creamy.

Incorporate Figs and Coconut: Carefully fold in the chopped figs and shredded coconut into the yogurt mixture. Be gentle to maintain the fig pieces intact and ensure an even distribution.

Prepare the Mold: Line an 8x8 inch (20x20 cm) baking dish with parchment paper, allowing some overhang for easy removal. If parchment paper isn't available, lightly grease the dish with coconut oil to prevent sticking.

Pour Mixture: Pour the yogurt mixture into the prepared baking dish, spreading it evenly with a spatula or the back of a spoon to smooth out the top surface.

Freeze: Cover the dish with plastic wrap or place a lid on it. Freeze for a minimum of 4-6 hours, or until the mixture is completely set. For the best texture, consider freezing it overnight.

Cut & Serve: Once frozen, lift the frozen block out of the dish using the parchment paper. Allow it to sit at room temperature for a few minutes to soften slightly for easier slicing. Cut into bars or squares with a sharp knife.

Garnish (Optional): For a beautiful presentation, add fresh fig slices and a light sprinkle of shredded coconut on top of the bars just before serving.

Prep Time: 20 minutes | Total Time: 6 hours (plus freezing time) | Servings: 12 bars

Presentation Tips: Serve the bars on a colorful platter with additional fresh figs around the edges. This not only enhances visual appeal but also adds a burst of freshness to each bite! Enjoy your tropical treat!
