Frozen Yogurt Blueberry Muffin Bars

1 ½ cups rolled oats

½ cup almond flour (or substitute with regular flour)

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup maple syrup or honey

¼ cup coconut oil, melted

1 tsp vanilla extract

1 ½ cups plain Greek yogurt

1 ½ cups fresh or frozen blueberries (if using frozen, do not thaw)

Optional toppings: chopped nuts, sliced almonds, shredded coconut

Instructions
 

Preheat the Oven: Set your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by lining it with parchment paper, ensuring that some paper hangs over the edges for easy removal after baking.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, baking powder, baking soda, and salt. Mix these dry ingredients together with a whisk or spoon until they are evenly distributed.

      Mix Wet Ingredients: In a separate bowl, thoroughly whisk together the maple syrup (or honey), melted coconut oil, and vanilla extract until the mixture is smooth and well combined.

        Combine Wet and Dry Mixtures: Carefully pour the wet mixture into the bowl with the dry ingredients. Gently stir until just combined; be cautious not to overmix as this could affect the texture.

          Add Yogurt and Blueberries: Using a spatula, gently fold in the Greek yogurt until fully integrated into the batter. Next, add the blueberries; if using frozen blueberries, fold them in gently to minimize discoloration of the batter.

            Bake: Transfer the batter into the prepared baking pan, spreading it evenly across the bottom. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

              Cool Completely: Once baked, remove the pan from the oven and let it cool for about 15 minutes. Then, using the parchment paper overhang, lift the bars out of the pan and place them on a wire rack to cool completely.

                Freeze: After the bars have cooled fully, cut them into squares or rectangles. Arrange them on a baking sheet lined with parchment paper and place them in the freezer for at least 2 hours, or until they are firm.
