Ingredients

2 cups vanilla Greek yogurt

1/2 cup unsweetened shredded coconut

1/4 cup smooth almond butter

1/4 cup honey or maple syrup

1/2 teaspoon pure vanilla extract

1/2 cup dark chocolate chips

1/4 cup chopped almonds

Pinch of sea salt

Cooking spray (optional, for lining molds)

Instructions

Prepare the Yogurt Mixture:

In a large mixing bowl, combine the vanilla Greek yogurt, almond butter, honey (or maple syrup), and pure vanilla extract. Whisk together until all ingredients are fully blended, creating a smooth and creamy mixture.

      Incorporate Coconut and Nuts:

Gently fold in the unsweetened shredded coconut, chopped almonds, and a small pinch of sea salt into the yogurt mixture. Use a spatula to ensure the coconut and almonds are evenly distributed throughout the yogurt.

          Fill the Molds:

If you're using silicone molds, consider lightly spritzing them with cooking spray to facilitate easy removal later on. Carefully spoon the yogurt mixture into each mold, filling them about two-thirds full. After filling, gently tap the molds on the countertop to eliminate any trapped air bubbles.

              Melt the Chocolate:

In a microwave-safe bowl, place the dark chocolate chips and heat them in 30-second intervals. Stir in between each interval until the chocolate is smooth and completely melted, taking care not to overheat.

                  Add the Chocolate Topping:

After about 30 minutes in the freezer, the yogurt should be partially frozen but still soft enough to work with. Remove the molds and drizzle or spoon the melted chocolate over each yogurt circle, ensuring an even layer on top of each one.

                      Freeze Until Set:

Place the molds back into the freezer and allow the frozen yogurt circles to set for at least 4 hours, or until they are completely frozen solid.

                          Serve Your Delight:

To remove the frozen yogurt circles from the molds, allow them to sit at room temperature for a couple of minutes if necessary. Gently pull them out and serve right away. Enjoy your delicious Almond Joy inspired frozen treat!
