Ingredients

2 cups fresh strawberries, hulled and chopped

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon pure vanilla extract

2 cups Greek yogurt (or dairy-free yogurt alternative)

1 tablespoon freshly squeezed lemon juice

A pinch of salt

1/4 cup granola or chopped nuts (optional, for topping)

Instructions

Prepare Strawberries: In a medium mixing bowl, combine the chopped strawberries with honey (or maple syrup). Let the mixture sit for 10 minutes to allow the strawberries to macerate and release their natural juices, creating a sweet syrup.

Blend Mixture: In a blender or food processor, add the macerated strawberries along with their juices, Greek yogurt, vanilla extract, lemon juice, and a pinch of salt. Blend on high until the mixture is smooth and creamy. If you prefer some texture, pulse a few additional times to leave small chunks of strawberries.

Pour into Molds: Carefully pour the creamy yogurt mixture into silicone molds of your choice or a lightly greased 8x8-inch baking dish. Gently tap the sides of the dish on the counter to eliminate any air bubbles and ensure an even fill.

Insert Sticks: If using molds, insert wooden sticks into the center of each one. If you opted for a baking dish, use a spatula to smooth the top of the yogurt mixture.

Freeze: Transfer the filled molds or baking dish to the freezer and allow them to freeze for a minimum of 4 hours, or until completely solid.

Remove and Cut: Once fully frozen, if you used a baking dish, carefully remove the frozen yogurt slab by running a knife along the edges, then cut it into bars. If you used molds, gently pull the sticks to release the yogurt bars from the molds.

Serve: Before serving, you may sprinkle granola or chopped nuts on top for an extra crunch and flavor boost. Enjoy your delicious and refreshing frozen yogurt bars!
