Ingredients

2 cups Greek yogurt (choose plain for a tart flavor or vanilla for added sweetness)

1 tablespoon honey or maple syrup (adjust based on desired sweetness)

1 teaspoon vanilla extract (add if using plain yogurt)

1 cup fresh raspberries (can substitute with thawed frozen raspberries, drained)

1/4 cup granola or your choice of nuts (optional, for added crunch)

A sprinkle of shredded coconut (optional)

A handful of dark chocolate chips or cacao nibs (optional)

Instructions

Prepare the Yogurt Mixture: In a medium-sized mixing bowl, combine the Greek yogurt with honey or maple syrup. If using plain yogurt, add the vanilla extract. Stir well until the mixture is smooth and evenly blended.

Line the Baking Sheet: Take a baking sheet and line it with parchment paper. This will prevent the yogurt from sticking, allowing for easy removal once it’s frozen.

Spread the Yogurt: Pour your yogurt mixture onto the lined baking sheet. Using a spatula, spread the yogurt into an even layer that’s approximately 1/2 inch thick.

Top with Raspberries: Gently scatter the fresh raspberries over the yogurt layer. For a better hold, you can lightly press down on the raspberries.

Add Crunch: Evenly sprinkle the granola, nuts, and shredded coconut on top of the yogurt and raspberries. If desired, also add in the dark chocolate chips or cacao nibs for a delightful flavor contrast.

Freeze: Place the baking sheet in the freezer and allow it to freeze for at least 4 hours, or until the yogurt is completely firm.

Cut and Serve: After the yogurt bark has fully frozen, carefully lift it out from the parchment paper. Use a sharp knife or pizza cutter to slice it into bite-sized pieces. Enjoy immediately or transfer to an airtight container and store in the freezer for up to two weeks.

Optional Serving Tip: For an extra burst of flavor, drizzle a little more honey or melted chocolate over the bark pieces just before serving.
