Ingredients

1 cup ripe pineapple, diced into small chunks

1 cup ripe mango, diced into small chunks

1 cup plain Greek yogurt (or coconut yogurt for a dairy-free alternative)

2 tablespoons honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

A pinch of salt

Optional toppings: shredded coconut, granola, crushed nuts, or mini chocolate chips

Instructions

Blend the Fruits: In your blender or food processor, add the diced pineapple and mango. Blend until you create a smooth puree. If you prefer a bit more texture, feel free to leave a few small chunks of fruit.

Mix the Yogurt Base: In a medium-sized mixing bowl, combine the Greek yogurt with honey (or maple syrup), vanilla extract, and a pinch of salt. Use a whisk to mix the ingredients together until you have a creamy and smooth consistency.

Incorporate the Fruit: Carefully fold the fruit puree into the yogurt mixture. Use a spatula to ensure that the fruit is evenly mixed throughout the yogurt without deflating it too much.

Prepare the Molds: Take a mini muffin tin or silicone mold and line it with cupcake liners for easy removal (optional). Alternatively, you can use an ice cube tray if you don’t have silicone molds.

Fill the Molds: Spoon the yogurt and fruit mixture into the prepared molds, filling each compartment almost to the brim. After filling, gently tap the mold on the counter to release any trapped air bubbles.

Add Toppings: If you’d like an extra crunch or flavor, sprinkle your choice of optional toppings—like shredded coconut, granola, crushed nuts, or mini chocolate chips—on top of each filled yogurt bite.

Freeze the Bites: Place the filled molds in the freezer. Allow them to freeze for a minimum of 4 hours, or until the bites are completely solid.

Remove and Enjoy: After they are fully frozen, gently remove the yogurt bites from the molds. If they seem stuck, run warm water over the outside of the molds for a few seconds to help loosen them.

Storage Instructions: Any remaining yogurt bites can be stored in an airtight container in the freezer. For the best flavor and texture, consume them within one month.
