4 ripe kiwis, peeled and chopped

1 cup full-fat coconut milk (for a creamy texture)

1/2 cup shredded unsweetened coconut (plus extra for garnish)

1/4 cup honey or maple syrup (adjust according to your sweetness preference)

1 teaspoon pure vanilla extract

1/4 cup freshly squeezed lime juice

1/4 teaspoon sea salt

1 tablespoon coconut oil (for greasing the baking dish)

Instructions
 

Prepare the Baking Dish: Start by lightly greasing an 8x8 inch square baking dish with the coconut oil. To ensure easy removal, line the bottom with parchment paper, leaving some overhanging on the sides. This will help lift the bars out once set.

    Blend the Kiwi: In a blender or food processor, place the chopped kiwis. Blend until they reach a smooth consistency. If you enjoy a bit of texture, reserve a few small kiwi pieces to mix in later. Transfer the kiwi puree to a bowl and set it aside.

      Create the Coconut Base: Using the same blender, add the coconut milk, shredded coconut, honey or maple syrup, vanilla extract, lime juice, and sea salt. Blend the mixture until all components are well-combined and creamy.

        Incorporate the Kiwi: Gently fold the creamy coconut mixture into the bowl containing the kiwi puree. If you saved any kiwi pieces earlier, fold them into the mixture now for added freshness and texture.

          Pour and Smooth: Pour the combined mixture into the prepared baking dish. With a spatula, spread the mixture evenly to create a smooth top. For a decorative touch, sprinkle some extra shredded coconut over the surface.
