Ingredients

1 ½ cups rolled oats

½ cup unsweetened shredded coconut

½ cup almond butter (or your preferred nut/seed butter)

½ cup pure maple syrup (or honey as an alternative)

¼ cup cocoa powder

½ teaspoon vanilla extract

¼ teaspoon sea salt

½ cup dark chocolate chips (use dairy-free if preferred)

2 tablespoons coconut oil

Instructions

In a spacious mixing bowl, combine the rolled oats and shredded coconut. Mix the two ingredients thoroughly to ensure they are distributed evenly.

In a separate bowl, whisk together the almond butter, maple syrup, cocoa powder, vanilla extract, and sea salt. Continue whisking until the mixture is smooth and creamy, without any lumps.

Pour the wet ingredients into the bowl containing the oats and shredded coconut. Use a spatula or spoon to stir until everything is well combined and the oats are effectively coated with the mixture.

Prepare an 8x8-inch baking dish by lining it with parchment paper, allowing some overhang on the sides to facilitate later removal of the slice.

Transfer the oat mixture into the lined baking dish, pressing it down firmly and evenly with the back of a spatula to create a smooth layer across the bottom.

In a small saucepan, gently melt the dark chocolate chips and coconut oil over low heat. Stir continuously until the mixture is fully melted and smooth, ensuring it doesn't burn.

Pour the melted chocolate over the pressed oat layer, using a spatula to spread it into an even layer, covering the oats completely.

Carefully place the baking dish in the freezer for about 1 to 2 hours, or until the chocolate has set completely and the oat slice is firm to the touch.

Once the mixture is firm, lift it out of the baking dish using the overhanging parchment paper. Place it on a cutting board and cut into squares or rectangles, as desired.

Store the chocolate coconut oat slices in an airtight container in the freezer, where they will stay fresh for up to two months. Enjoy them straight from the freezer for a delightful and refreshing snack!
