1 medium ripe watermelon

1 cup cooked quinoa

1 cup black beans, drained and rinsed

1/4 cup fresh cilantro, chopped

1 avocado, diced

Juice of 1 lime

1 teaspoon chili powder

Salt and pepper, to taste

1/2 cup crumbled feta or queso fresco (optional)

Fresh lime wedges, for serving

Instructions
 

Prepare the Watermelon Shells:
