2 tablespoons rice vinegar

1 tablespoon granulated sugar

1 teaspoon salt

1/2 cup cucumber, sliced into thin strips

1/2 cup carrots, julienned

1/2 cup bell peppers, sliced (a variety of colors for aesthetic appeal)

1 ripe avocado, sliced

1/4 cup red cabbage, shredded

1/4 cup fresh cilantro or basil, chopped

1/4 cup pickled ginger (for serving)

Soy sauce or tamari (for dipping)

Prepare the Sushi Rice: Begin by rinsing the sushi rice under cold water until the water runs clear, removing excess starch. Cook the rice according to the instructions on the package. Once done, allow it to cool slightly before fluffing it gently with a fork to separate the grains.

    Season the Rice: In a small bowl, combine the rice vinegar, sugar, and salt. Stir until the sugar and salt are fully dissolved. Drizzle this mixture over the warm rice and gently fold it in until the rice is evenly coated. Allow it to cool to room temperature.

      Prep the Veggies: While the rice is cooling, wash and slice your vegetables into thin strips. Arrange the sliced veggies in a colorful assortment to facilitate easy assembly.

        Assemble the Wraps: Place a nori sheet shiny side down on a clean bamboo sushi mat or a flat cutting board. Wet your hands to prevent sticking, then spread a thin layer of sushi rice over the bottom two-thirds of the nori sheet.
