12 oz rotini pasta

1 lb ground beef (or turkey)

1 small onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 cup corn (fresh, frozen, or canned)

2 cups shredded cheddar cheese, divided

1 cup sour cream

1 cup salsa

½ cup fresh cilantro, chopped (optional, for garnish)

1 tsp olive oil

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to ensure it's hot and ready for baking.

    Cook the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to the package instructions until it reaches an al dente texture. Once cooked, drain the pasta and set it aside to cool slightly.

      Brown the Meat: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until it becomes translucent. Stir in the minced garlic and continue to sauté for an additional minute, just until the garlic becomes fragrant.
