Falafel Wraps with Tahini

1 cup dried chickpeas, soaked overnight

1 small onion, roughly chopped

4 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking powder

Salt and freshly ground black pepper to taste

For the Tahini Sauce:

1/2 cup tahini

1/4 cup water (adjust to achieve your preferred consistency)

2 tablespoons lemon juice

1 clove garlic, minced

Salt to taste

For the Wraps:

4 large whole wheat wraps or pita bread

1 cup lettuce, chopped

1 tomato, diced

1 cucumber, sliced

Pickles (optional)

Fresh mint leaves (optional)

Prepare the Falafel Mixture: After soaking, drain and rinse the chickpeas thoroughly. In a food processor, combine the drained chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse the mixture until it forms a coarse paste; avoid over-processing to retain some texture. Transfer the mixture to a bowl and refrigerate for at least 30 minutes to firm up.

    Shape the Falafel: Once chilled, take a small amount of the mixture in your hands and roll it into balls or shape them into patties about 1.5 inches in diameter. If the mixture feels too dry or crumbly, add a tablespoon of water to help it bind better.

      Fry the Falafel: In a deep skillet, heat oil over medium-high heat until it shimmers. Carefully place the falafel balls into the hot oil, frying them for 3-4 minutes on each side, or until they are a rich golden brown and crispy. Once cooked, remove the falafel and let them drain on a paper towel-lined plate.

        Make the Tahini Sauce: In a mixing bowl, combine tahini, water, lemon juice, minced garlic, and a pinch of salt. Whisk the ingredients together until smooth and creamy. Adjust the amount of water to achieve your desired sauce consistency—aim for it to be creamy yet pourable.

          Assemble the Wraps: Lay each whole wheat wrap flat and start with a base of chopped lettuce. Add a layer of diced tomatoes and cucumber slices, followed by a few crispy falafel. Drizzle a generous amount of the creamy tahini sauce on top. If desired, add pickles and fresh mint leaves for an extra burst of flavor.

            Wrap and Serve: Fold in the sides of each wrap gently, then roll it up tightly from the bottom to enclose the fillings. You can slice the wrap in half for easier handling. Serve immediately with extra tahini sauce on the side for dipping.
