Egg and Cheese Breakfast Muffins

6 large eggs

1 cup shredded cheddar cheese

1/2 cup milk

1/2 cup diced bell peppers (choose a mix of colors for a vibrant touch)

1/4 cup chopped green onions

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional, for added warmth)

Cooking spray or paper muffin liners

Instructions
 

Preheat your oven to 350°F (175°C). Prepare a 12-cup muffin tin by lining it with paper muffin liners or giving it a light coating of cooking spray to prevent sticking.

    In a large mixing bowl, use a whisk to beat together the eggs and milk until well blended and frothy.

      To the egg mixture, add the shredded cheddar cheese, diced bell peppers, chopped green onions, garlic powder, onion powder, salt, black pepper, and paprika (if you're using it). Mix everything thoroughly until all the ingredients are evenly combined.

        Carefully pour the egg mixture into each muffin cup, filling them about 2/3 full to allow for expansion while baking.

          Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are puffed, set in the center, and display a light golden color on top. You can test for doneness by inserting a toothpick into the center of a muffin; it should come out clean.

            Once baked, remove the muffin tin from the oven and let the muffins cool in the tin for about 5 minutes.

              After cooling slightly, use a fork or a knife to gently lift each muffin out of the tin and transfer them to a wire rack to cool completely.

                Enjoy the muffins warm, or allow them to cool and store them in an airtight container in the refrigerator for up to 5 days. To enjoy later, simply reheat them in the microwave for about 30 seconds.
