1 pound ground beef (or ground turkey)

1 packet (1 oz) taco seasoning mix

12 small flour tortillas

1 cup shredded cheddar cheese

1 cup refried beans

1 cup diced tomatoes

1 cup shredded lettuce

1/2 cup sour cream

1/4 cup sliced jalapeños (optional, for added spice)

1/4 cup fresh cilantro, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) to get it ready for baking the taco cups.

    Cook the Ground Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook the meat, breaking it apart with a spatula, until it is browned and cooked through. Once browned, drain any excess grease from the skillet.

      Add Seasoning: Stir in the taco seasoning mix and a splash of water (approximately 1/4 cup). Allow the mixture to cook for an additional 2-3 minutes, stirring occasionally, until it thickens slightly. Remove the skillet from the heat.

        Cut the Tortillas: Using a round cookie cutter or the rim of a large glass, cut circles out of each tortilla. You should aim to get 12 circles to form mini cups.

          Shape the Tortilla Cups: Lightly coat a muffin tin with cooking spray. Take each tortilla circle and gently press it into the muffin tin, shaping it into a cup. Ensure that the edges of the tortilla extend above the rim of the cup.

            Layer the Filling: Begin assembling the taco cups by spooning a layer of refried beans into the bottom of each tortilla cup. Follow this with a hearty portion of the seasoned meat, then add a generous sprinkle of shredded cheddar cheese on top.

              Bake the Taco Cups: Place the prepared muffin tin in the oven and bake for approximately 10-12 minutes, or until the cheese has melted and the tortilla edges are crispy and golden brown.

                Garnish and Serve: Once baked, carefully take the taco cups out of the oven and let them cool for about a minute.
