Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper, to taste

1 bag (12 oz) tortilla chips

2 cups shredded sharp cheddar cheese

1 cup black beans, drained and rinsed

1 small jalapeño, thinly sliced (optional)

1 cup diced tomatoes (fresh or canned)

½ cup sliced black olives

¼ cup fresh cilantro, chopped

1 cup sour cream or Greek yogurt

1 ripe avocado, sliced (for garnish)

Lime wedges, for serving

Instructions

Prepare the Chicken: In a small mixing bowl, whisk together the olive oil, smoked paprika, garlic powder, cumin, along with a generous pinch of salt and pepper. Rub this flavorful mixture all over the chicken breasts to ensure they are well coated.

Grill the Chicken: Preheat your grill to medium-high. Once hot, place the chicken on the grill and cook for approximately 6-7 minutes on each side, or until the chicken is thoroughly cooked and reaches an internal temperature of 165°F (75°C). Transfer the grilled chicken to a cutting board and allow it to rest for 5 minutes. After resting, slice the chicken into thin, bite-sized strips.

Layer the Nachos: On a large baking sheet or an oven-safe platter, spread the tortilla chips out in a single, even layer. Evenly distribute the sliced grilled chicken over the chips, followed by the drained black beans and diced tomatoes.

Cheesy Goodness: Generously sprinkle the shredded sharp cheddar cheese over the entire nacho layer, covering all the toppings for maximum meltiness.

Melt the Cheese: Slide the baking sheet under the broiler setting of your oven and broil for 2-3 minutes, or until the cheese is fully melted and bubbling. Keep a close watch to prevent burning!

Final Touches: Carefully remove the nachos from the oven. Scatter the sliced jalapeños (if using), black olives, and chopped cilantro over the melted cheese and toppings for added flavor and color.

Serve: Add dollops of sour cream or Greek yogurt on top, and arrange the sliced avocado beautifully on the side. Serve your Cheesy Fiesta Chicken Nachos immediately with lime wedges on the side for a fresh burst of zest!
