1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp ground cumin

½ tsp smoked paprika

½ tsp salt

¼ tsp black pepper

1 tbsp olive oil

8 small corn or flour tortillas

2 ripe avocados, diced

1 medium tomato, diced

1 small red onion, finely chopped

1 jalapeño, seeds removed and finely chopped

1 lime, juiced

¼ cup fresh cilantro, chopped

Cook the Beef:

    - In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté for about 3 minutes, or until the onion becomes translucent and soft.

      - Stir in the minced garlic and continue cooking for an additional 1 minute, or until the garlic is fragrant.

        - Add the ground beef to the skillet, breaking it apart with a spatula. Cook the beef for approximately 5-7 minutes, stirring occasionally, until it is browned and fully cooked through.

          - Begin seasoning the meat by adding the chili powder, ground cumin, smoked paprika, salt, and black pepper. Mix thoroughly to ensure the spices are well incorporated, then simmer for another 2 minutes to allow the flavors to meld.

            Prepare the Avocado Salsa:

              - While the beef cooks, take a medium-sized bowl and gently combine the diced avocados, diced tomato, finely chopped red onion, and jalapeño.

                - Squeeze the lime juice over the mixture and sprinkle with salt and pepper to taste. Carefully toss the ingredients together, taking care not to mash the avocados.
