1 large cucumber, thinly sliced

8 oz cream cheese, softened to room temperature

2 tablespoons sour cream

1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

½ teaspoon garlic powder

Salt and pepper, to taste

8 slices of whole grain or white bread

4-6 lettuce leaves, rinsed and patted dry (optional)

Fresh chives, chopped for garnish (optional)

Instructions
 

Prepare the Cream Cheese Mixture:

    - In a medium mixing bowl, combine the softened cream cheese, sour cream, chopped dill, lemon juice, garlic powder, and a pinch of salt and pepper.

      - Use a fork or spatula to mix thoroughly until the mixture is creamy and well-combined, ensuring a smooth texture with no lumps.

        Slice the Cucumber:

          - Rinse the cucumber under cold water and pat it dry with a paper towel.

            - With a sharp knife or mandoline slicer, carefully slice the cucumber thinly to achieve uniform thickness, which helps with even layering in the sandwiches.

              Assemble the Sandwiches:

                - Arrange 4 slices of bread on a clean cutting board.

                  - Spread a generous layer of the cream cheese mixture evenly over each slice.

                    - If using, place a lettuce leaf on top of the cream cheese for an extra layer of crunch and flavor.

                      - Layer 3-4 cucumber slices on top of the lettuce or directly on the cream cheese, slightly overlapping for a visually appealing presentation.
