Ingredients

2 ripe avocados, halved and pitted

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional, for added heat)

Salt and black pepper, to taste

1 tablespoon lime juice

8 small corn tortillas

1 cup shredded purple cabbage

½ cup fresh cilantro, chopped

1 jalapeño, thinly sliced (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Avocados: Carefully scoop out the flesh from each avocado half and transfer it to a mixing bowl. Add lime juice, a pinch of salt, and black pepper to taste. Use a fork to mash the avocado until it is slightly chunky, ensuring some texture remains for added bite.

Coat the Avocados: In a shallow dish, combine the panko breadcrumbs, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), and additional salt and black pepper to taste. Take a spoonful of the mashed avocado, shape it into a small patty or chunk, and coat it thoroughly in the breadcrumb mixture. Continue this process until all the avocado has been used.

Air-Fry the Avocados: Preheat your air fryer to 375°F (190°C) for about 5 minutes. Arrange the coated avocado chunks in a single layer in the air fryer basket, ensuring they are not overlapping. Air-fry for 8-10 minutes, or until the outside is golden brown and crispy, flipping the pieces halfway through cooking for even crispiness.

Warm the Tortillas: While the avocado bites are cooking, heat a dry skillet over medium heat. Warm each corn tortilla for about 30 seconds on each side, or until they become pliable and warm.

Assemble the Tacos: On each warm tortilla, start with a generous layer of shredded purple cabbage as the base. Next, add a few of the air-fried avocado chunks on top. Finish off by sprinkling the chopped cilantro and placing a few slices of jalapeño for an added kick.

Serve: Serve the tacos immediately, accompanied by lime wedges for squeezing over the top, enhancing the flavors beautifully.
