2 cups rotini pasta (or pasta of your choice)

2 cups cooked and shredded chicken (rotisserie chicken works well)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 cup milk

1 cup frozen mixed vegetables (e.g., peas, carrots, corn)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and black pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Prep the Chicken: If your chicken isn’t cooked, heat the olive oil in a skillet over medium heat. Add the chicken and cook until fully cooked through (about 7-10 minutes). Once cooked, shred the chicken using two forks and set aside.

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook for about 6-7 minutes until al dente; it will continue to cook in the crockpot. Drain and set aside.

      Mix the Ingredients: In a large mixing bowl, combine the cooked pasta, shredded chicken, shredded cheddar cheese (reserve some for later), cream of chicken soup, chicken broth, milk, frozen mixed vegetables, garlic powder, onion powder, Italian seasoning, and season generously with salt and pepper. Stir well until all the ingredients are evenly incorporated.
