1 lb (450g) boneless, skinless chicken breasts

8 oz (225g) penne pasta

1 can (15 oz) diced tomatoes, including juices

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 tablespoons Cajun seasoning (or to taste)

1 bell pepper, chopped (choose red, yellow, or green for color)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prep the Chicken: Begin by seasoning the chicken breasts generously with salt, pepper, and 1 tablespoon of Cajun seasoning. In a large skillet, heat olive oil over medium heat. Add the chicken breasts to the skillet and sear for 3-4 minutes on each side until they are golden brown. Note that they do not need to be fully cooked, as they will continue cooking in the crockpot.

    Prepare the Sauce: In a mixing bowl, combine the diced tomatoes (with their juices), heavy cream, chicken broth, the remaining Cajun seasoning, and minced garlic. Mix well until all ingredients are fully incorporated and the flavors are blended.

      Layer the Ingredients: In the crockpot, place the seared chicken breasts at the bottom. Top the chicken with the chopped bell pepper and diced onion. Pour the prepared sauce evenly over the chicken and vegetables, ensuring everything is well covered.
