1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1 tsp garlic powder

1 tsp onion powder

1/2 tsp black pepper

1/2 tsp salt

1 large egg

3/4 cup buttermilk

Vegetable oil, for frying

For the Honey Garlic Sauce:

1/2 cup honey

1/4 cup soy sauce

4 cloves garlic, minced

1 tbsp fresh ginger, grated

1 tsp sesame oil

1 tsp rice vinegar

1 tsp cornstarch mixed with 1 tbsp water (slurry)

Instructions
 

Marinate the Chicken:

    - In a mixing bowl, combine the chicken pieces with the buttermilk. Ensure each piece is thoroughly coated. Cover and marinate in the refrigerator for at least 30 minutes (or overnight for enhanced flavor).

      Prepare the Coating:

        - In a separate bowl, whisk together the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, black pepper, and salt until evenly mixed.

          Heat the Oil:

            - In a large, deep skillet or a fryer, heat approximately 2 inches of vegetable oil over medium-high heat. Use a thermometer to ensure the oil reaches 350°F (175°C) for optimal frying.

              Coat the Chicken:

                - Remove the marinated chicken from the buttermilk, allowing any excess to drip off. Dredge each piece in the flour mixture, pressing gently to ensure a complete coat. Shake off any excess flour before frying.

                  Fry the Chicken:

                    - Carefully add several coated chicken pieces to the hot oil, taking care not to overcrowd the pan. Fry for 5-7 minutes, or until the chicken is golden brown and crispy.                             Toss and Serve:

                              - In a large mixing bowl, gently combine the crispy chicken bites with the honey garlic sauce, tossing until each piece is well-coated.
