8 small corn tortillas

1 cup shredded cabbage (choose between green or purple for color)

1 cup diced ripe tomatoes

1 ripe avocado, diced

1/2 cup crumbled feta cheese

1/4 cup chopped fresh cilantro

Juice of 1 lime

Salt and pepper, to taste

Vegetable oil, for frying (enough to cover half of the tortillas)

For the Spicy Mango Salsa:

1 ripe mango, diced

1/4 red onion, finely chopped

1 jalapeño, seeded and minced (adjust based on spice preference)

1/4 cup chopped fresh cilantro

Juice of 1 lime

Salt, to taste

For the Creamy Chipotle Sauce:

1/2 cup Greek yogurt or sour cream

2 tablespoons mayonnaise

1-2 teaspoons chipotle in adobo sauce (adjust more or less according to taste)

1 teaspoon lime juice

Instructions
 

Prepare the Spicy Mango Salsa:

    - In a medium mixing bowl, combine the diced mango, finely chopped red onion, minced jalapeño, fresh cilantro, lime juice, and salt. Stir well to combine all ingredients and let sit for about 10 minutes to allow the flavors to meld beautifully.

      Make the Creamy Chipotle Sauce:

        - In a small bowl, whisk together the Greek yogurt (or sour cream), mayonnaise, chipotle in adobo sauce, lime juice, and a pinch of salt until the mixture is smooth and creamy. Taste and adjust the seasoning if necessary. Set aside.

          Prepare the Crispy Taco Shells:

            - In a deep skillet, heat vegetable oil over medium heat. The oil should be deep enough to submerge half of each tortilla for frying.

              - While the oil is heating, prepare the taco filling by combining shredded cabbage, diced tomatoes, diced avocado, crumbled feta cheese, chopped cilantro, lime juice, and a pinch of salt and pepper in a separate bowl. Mix gently until all ingredients are well incorporated.

                - Once the oil is hot (test by dropping a small piece of tortilla into the oil; it should sizzle), carefully place one tortilla into the hot oil.                   - Once cooked, remove the crispy tortilla and let it drain on a paper towel. Repeat this process for the remaining tortillas.
