Ingredients

2 large sweet potatoes, peeled and cut into thick fries

3 tablespoons olive oil

1 tablespoon cornstarch

1 tablespoon Cajun seasoning (adjust based on your spice preference)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon sea salt

Freshly cracked black pepper, to taste

Optional: chopped fresh parsley for garnish

Instructions

Preheat the Oven: Set your oven to preheat at 425°F (220°C). To simplify cleanup, line a large baking sheet with parchment paper.

Prepare the Sweet Potatoes: In a sizable mixing bowl, combine the cut sweet potato fries and the olive oil. Toss them thoroughly until each fry is fully coated with the oil, ensuring even cooking.

Mix the Seasoning: In a small mixing bowl, whisk together the cornstarch, Cajun seasoning, garlic powder, onion powder, smoked paprika, sea salt, and black pepper. Once mixed, evenly sprinkle this dry mixture over the oiled sweet potato fries, tossing them again until all fries are well-coated with the seasoning blend.

Arrange on Baking Sheet: Spread the seasoned sweet potato fries out in a single layer on the prepared baking sheet. Be sure to leave space between the fries to allow for proper air circulation and maximum crispiness.

Bake to Perfection: Place the baking sheet in the preheated oven and bake for 25 to 30 minutes. Remember to flip the fries halfway through baking to ensure they cook evenly. Keep a watchful eye during the last few minutes for the perfect golden brown color while preventing any burning.

Garnish and Serve: After baking, take the fries out of the oven and let them rest for about a minute. For an added touch of freshness and flavor, sprinkle with chopped fresh parsley before serving. Enjoy warm with your choice of dipping sauce, such as spicy mayo or ranch dressing.
