2 cups cooked chicken, shredded (rotisserie chicken works wonderfully)

1/2 cup BBQ sauce (choose your favorite brand or use homemade)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup bell pepper, diced (any color you like)

8 flour tortillas (8-inch)

2 tablespoons olive oil (for frying)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Optional: Fresh cilantro, chopped (for garnish)

Preheat the Skillet: Begin by placing a large non-stick skillet over medium heat. Drizzle in 1 tablespoon of olive oil and let it warm up for a couple of minutes.

    Prepare the Chicken Filling: In a mixing bowl, combine the shredded chicken with the BBQ sauce. Add garlic powder, onion powder, smoked paprika, a pinch of salt, and pepper. Mix well until the chicken is evenly coated with all the spices and BBQ sauce.

      Assemble the Quesadillas: Lay each tortilla flat and on one half, sprinkle a layer of both cheddar and mozzarella cheese. Generously add the BBQ chicken mixture, followed by a handful of sliced red onions and diced bell peppers. Finish with another layer of cheese on top before folding the other half of the tortilla over the filling to form a semi-circle.

        Cook the Quesadillas: Carefully place the folded quesadilla into the preheated skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy. Carefully flip the quesadilla, adding the remaining tablespoon of olive oil to the skillet. Continue to cook for another 3-4 minutes until the second side is also golden and crispy. Remove the cooked quesadilla from the skillet and repeat with the remaining tortillas.
