Ingredients

1 large head of cauliflower, cut into bite-sized florets

3 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 cup shredded sharp cheddar cheese

½ cup finely grated Parmesan cheese

¼ cup panko breadcrumbs (for extra crunch)

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). To make cleanup easier, line a large baking sheet with parchment paper.

Prepare the Cauliflower: In a spacious mixing bowl, combine the cauliflower florets with the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss everything together thoroughly to ensure each floret is well-coated with the oil and seasonings.

Bake the Cauliflower: Transfer the seasoned cauliflower florets to the lined baking sheet, spreading them out into a single layer. Bake in the preheated oven for about 25 minutes, or until the florets begin to soften and the edges turn a light golden brown.

Add the Cheeses: Carefully remove the baking sheet from the oven. Evenly sprinkle the shredded cheddar cheese over the roasted cauliflower. Follow with the grated Parmesan cheese, and finish off with an even layer of panko breadcrumbs.

Finish Baking: Return the baking sheet to the oven for an additional 10-12 minutes. Bake until the cheese is thoroughly melted and bubbly, and the breadcrumbs have turned a delightful golden brown and crispy.

Garnish and Serve: Once finished, take the cauliflower out of the oven and allow it to cool for a couple of minutes. For an added touch of freshness, garnish with freshly chopped parsley if desired. Serve warm as a mouthwatering side dish or a satisfying snack!
