Ingredients

For the Crispy Potatoes:

4 medium russet potatoes, peeled and cut into ½-inch cubes

2 tablespoons olive oil

1 tablespoon ranch seasoning mix

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper to taste

For the Tacos:

8 small corn tortillas

1 cup shredded iceberg lettuce

1 cup ripe tomatoes, diced

1 cup sharp cheddar cheese, shredded

½ cup sour cream or Greek yogurt (for drizzling)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Potatoes:

    - Begin by peeling the russet potatoes, then cutting them into uniform ½-inch cubes to ensure they cook evenly.

      Season the Potatoes:

        - In a large mixing bowl, toss the diced potatoes with the olive oil, ranch seasoning, garlic powder, smoked paprika, salt, and black pepper. Mix thoroughly until all potatoes are evenly coated with the seasoning blend.

          Air Fry the Potatoes:

            - Preheat your air fryer to 400°F (200°C).

              - Spread the seasoned potato cubes in the air fryer basket in a single layer. If needed, work in batches to avoid overcrowding.

                - Cook the potatoes for 15-20 minutes, shaking the basket halfway through the cooking time to promote even crisping. They should come out golden brown and crispy.

                  Warm the Tortillas:

                    - While the potatoes are cooking, warm the corn tortillas. You can do this by heating a non-stick skillet over medium heat and warming each tortilla for about 30 seconds per side until soft and pliable. Alternatively, wrap them in aluminum foil and heat in a preheated oven at 350°F (175°C) for 10 minutes.

                      Assemble the Tacos:

                        - When the potatoes are done air frying, remove them from the air fryer.

                          - Take a warm tortilla and place a generous scoop of the crispy ranch potatoes in the center.

                            - Add a layer of shredded lettuce, followed by diced tomatoes and a sprinkle of shredded cheddar cheese.

                              Finish and Serve:

                                - Drizzle sour cream or Greek yogurt over the loaded tacos, and top with freshly chopped cilantro for a burst of freshness.

                                  - Serve immediately with lime wedges on the side to squeeze over the tacos for an extra zesty flavor.
