8 oz (225g) of pasta (fettuccine or penne)

2 cups cherry tomatoes, halved

3 cloves of garlic, minced

1 cup heavy cream

1 cup fresh basil leaves, chopped (plus extra for garnish)

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon salt (to taste)

1/2 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional, for a spicy kick)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package directions until al dente (tender but still firm to the bite). Before draining, reserve 1/2 cup of the starchy pasta water. Drain the pasta and set it aside.

    Sauté the Tomatoes: In a large skillet, heat the olive oil over medium heat. Once hot, add the halved cherry tomatoes. Cook for approximately 5 minutes, stirring occasionally, until the tomatoes soften and begin to burst, releasing their juices.

      Incorporate Garlic: Add the minced garlic to the skillet with the tomatoes. Sauté for an additional 1-2 minutes, stirring frequently, until the garlic becomes fragrant but avoid browning it to prevent bitterness.
