Ingredients

12 oz cheese tortellini (fresh or frozen)

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Instructions

Cook the Tortellini: In a large pot, bring salted water to a rolling boil. Carefully add the tortellini and cook according to package instructions, usually around 3-5 minutes, until they are al dente. Once cooked, drain the tortellini in a colander and set them aside.

Sauté the Vegetables: While the tortellini cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic, stirring for about 1 minute until it becomes fragrant. Next, add the chopped spinach to the skillet and sauté for 2-3 minutes, or until the spinach is tender and wilted.

Incorporate the Artichokes: Add the roughly chopped artichoke hearts to the skillet with the spinach and garlic. Cook for an additional 2 minutes, ensuring the artichokes are warmed through and infused with the flavors.

Prepare the Creamy Sauce: Reduce the heat to low and carefully pour in the heavy cream. Gradually sprinkle in the grated Parmesan cheese, stirring continuously until the cheese has melted completely and the sauce is smooth and creamy. For an extra layer of flavor, if you like a bit of heat, incorporate the red pepper flakes. Adjust the seasoning with salt and pepper according to your taste.

Fold in the Tortellini: Gently add the drained tortellini into the creamy mixture. Using a spatula, fold the tortellini into the sauce, ensuring that all the pasta is generously coated and heated through, about 2 minutes.

Serve: Transfer your indulgent tortellini to a serving dish. Garnish with freshly chopped parsley and, if desired, a sprinkle of additional Parmesan cheese. Enjoy while hot!
