Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves. Drizzle a teaspoon of olive oil over the cut surface and wrap the garlic tightly in aluminum foil. Place the wrapped garlic in the oven and roast for 30-35 minutes, or until the cloves are soft and golden brown. Once roasted, remove from the oven and let it cool slightly before handling.

    Boil the Potatoes: While the garlic is roasting, prepare the potatoes. In a large pot, combine the cubed potatoes and cover them with cold water. Add a generous pinch of salt. Bring the pot to a boil over medium-high heat, then reduce the heat to maintain a gentle simmer. Cook for 15-20 minutes or until the potatoes are fork-tender; drain well.

      Drain and Mash: After draining the potatoes, return them to the warm pot. Squeeze the roasted garlic cloves from their skins into the pot with the potatoes; you should have about 4-6 cloves that will easily blend in.
