Ingredients

4 medium potatoes, peeled and diced into 1-inch cubes

6 strips of bacon, chopped into small pieces

1 medium onion, diced

2 cloves garlic, minced

3 cups chicken broth (low sodium preferred)

1 cup heavy cream

1 cup whole milk

2 cups corn, fresh off the cob or frozen

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Bacon: In a large pot over medium heat, add the chopped bacon. Cook until the bacon is crispy and golden brown, approximately 8-10 minutes. Using a slotted spoon, transfer the bacon to a plate lined with paper towels to drain, leaving about 2 tablespoons of the rendered bacon fat in the pot.

Sauté Aromatics: In the same pot, add the diced onion. Sauté for about 5 minutes, stirring occasionally, until the onion becomes translucent and soft. Add the minced garlic and cook for an additional 1 minute, stirring frequently, until fragrant.

Add Potatoes and Seasonings: Incorporate the diced potatoes into the pot. Sprinkle in the dried thyme, smoked paprika, salt, and pepper. Stir everything together to ensure the potatoes are well-coated with the seasonings.

Simmer the Chowder: Pour in the chicken broth and bring the mixture to a vigorous boil. Once boiling, reduce the heat to low, cover the pot, and let the chowder simmer for about 15-20 minutes, or until the potatoes are fork-tender.

Create the Creamy Texture: Once the potatoes are cooked through, use a potato masher or an immersion blender to gently mash some of the potatoes, creating a silky texture while leaving a few chunks for rustic appeal.

Incorporate Dairy and Corn: Stir in the corn, heavy cream, and whole milk. Allow the chowder to gently simmer for another 5 minutes, allowing the flavors to meld together beautifully.

Final Touches: Taste the chowder and adjust the seasoning with additional salt and pepper if necessary. Just before serving, fold in the reserved crispy bacon to integrate its flavor back into the chowder.

Garnish and Serve: Ladle the chowder into bowls and garnish each serving with a sprinkle of chopped green onions and fresh parsley for a vibrant touch.
